Homemade Chicken & Mushroom Ramen

Time for a recipe I think! As stated before, I don't usually make up my own recipes, so will always give credit to where I get them from.

This particular recipe is from an awesome blog called Fork Knife Swoon. I absolutely love her stuff, very simple and usually pretty quick. It is usually my boyfriend that makes this recipe, but last night I decided to have a go. It didn't come out as he usually does it, so I'll be asking him whether he does anything different! I followed the recipe in half (because there was only one of me last night).

Here's the ingredients I used:

(Plus 1 tsp of vegetable oil - I mistakenly thought I could use frylight when I took the picture! And a chicken breast, which I didn't want to contaminate everything with)

It's a really simple recipe to follow, and she recommends it takes about an hour overall, which I found was about right. I thought it did make quite a lot of the ramen broth, so I think I would take it down a little next time. The recipe calls for 4 cups of chicken stock, so of course I did two for myself last night and could immediately tell it was too much. I'm pretty sure the boyfriend (I should probably name him, shouldn't I? His name is Alex) does 1 litre for two of us and sometimes there's still some left! I suppose it depends how much you like it. It is super flavoursome so don't be shy to pour it on!

So once I had finished, this was the finished product:

Some notes for next time: There was too much soy sauce in this! I need to consult Alex on how much he uses, because you can see how dark the broth is and when you compare it to the pictures of the original recipe, its much darker. I'll put a picture up of Alex's attempt too, because his come out a lot better! Other than the broth though, everything else was great. And it still tasted awesome, so I'm certainly not complaining!

Notice a big difference! We used a different brand of noodles here too, hence their much lighter colour and the chicken breasts were normal size, so we've got one each here. In my ramen, I had half a chicken breast because it was huge, hence whey its a lot thicker too. And we used shiitake mushrooms. Basically you can change stuff up!

Both pictures tell the same story though and there are two important points to take out of this.

1. This recipe is super yummy, easy and should be tried! I'd never even really had ramen before we tried this, so don't be afraid.

2. We do not own suitable ramen bowls and spoons! This is something that gets me! Sometimes we make really great food and then we can't present/eat it properly. We're in need of going on a little ramen bowl hunt!
